Broad Bean Summer Tartine

We love a nice quick dish when we are short on time but still want to eat something yummy. I feel like in Summer it is particularly easy with all the great produce around to whizz up something simple in just a moment. 

This little open sandwich is one of our quick Summer lunches - if you have the ingredients at hand it won't take you longer then a few minutes to prepare. 

Recipe for 3-4 tartines

  • Bunch of fresh mint leaves
  • 1 garlic
  • 1kg of broad beans (still in their shell) 
  • 4 tbsp of parmesan 
  • juice of 1/2 a lemon
  • 3-4 tbsp of lemon juice (or more if you like it :)
  • salt and peper

Get the fresh broad beans out of their 'shell'. Bring some water to the boil, add the beans and cook until tender (3-4 minutes). Add garlic first to a mortar and crush until its smooth now add cooked beans, parmesan, lemon and mix/crush until the ingredients are rough pieces. Add olive oil, salt & pepper and chopped mint leaves, mix them all together and add it to some nice pieces of (fresh or toasted) sourdough. Add some more olive oil if you like and enjoy!
